We founded Edible Chemistry with a desire to help businesses large and small develop unique products and create market disruption. 

We noticed that most Product Development scientists and firms were focused on the status quo and we wanted to help innovators push boundaries with unique products, novel ingredients, or inventive flavor combinations.

Jaime Underwood

Founder

An experienced food scientist with more than 17 years developing and commercializing quality products, Jaime has proven to perform at the highest level when it comes to providing technical expertise for product development and commercialization. Jaime has directly developed over 200 beverage, dairy, supplement, and food products that are currently in the market and has advised on the development or launch of hundreds of additional products.

An industry leader in ingredient knowledge and process improvement, Jaime continues to push the boundaries of food and beverage innovation.

Jeff Underwood

In the 28 years Jeff has been a member of the food service community, he has gained a reputation as an innovative beverage developer who provides truly unique products and experiences for his customers.  He gains inspiration for his work from his love of classic cocktails, specialty coffee and tea and the many amazing drinking and dining occasions from years of international travel. His experience spans the totality of the beverage industry from bartending to corporate training to menu development to trendspotting. 

Jeff has spent his last 17 years spearheading beverage development and customer experience presentations for two of the largest food and beverage ingredient companies in the world as well as doing independent beverage consulting for clients large and small.  This knowledge has allowed him to couple mixology trends with chemistry to continually redefine and optimize the beverage category.

Chief Innovation Officer

Jenny, our confectionary development scientist,  graduated with a bachelor’s degree in Food Science from the University of Florida. At UF, she was a culinary arts instructor at the Alfred and Cathy Hitchcock Food Pantry. By utilizing shelf-stable ingredients with the fresh produce from UF’s on-site farm, Jenny worked with her team to create nutritionally balanced recipes and taught them to students in night classes.

After the program ended, Jenny continued afterschool activities working as a student assistant in UF’s Sensory Research Lab and becoming a teaching assistant for UF’s Microbiology Department.

Trinidad Reyes

Trinidad began his career as a Research Technician at a large sugar manufacturing company, amassing the fundamentals of sugar manufacturing at scale and learning how to work with various liquid sweeteners in food, beverage, and confectionery applications. Realizing his passion for all things sweet, he worked up to a Food Scientist role at the same organization and assisted various customers with optimizing their formulas using traditional and alternative sweeteners. Obtaining this solid foundation in working with carbohydrates in various food applications and being customer service-centric led Trinidad to pursue further his passion and curiosity for all things confectionery, specifically chocolate and gummies, and launch various confectionery products in high demand while always keeping customer expectations and quality top of mind. With Trinidad as Edible Chemistry’s Commercialization Manager, he will serve as your product steward that ensures a seamless transition from the completion of product development to the scale-up and commercialization phase, serving as the bridge between innovation and full-scale production.

Misha Yerlick

Business Development Team

Misha Yerlick is part of the business development team for edible chemistry and do all the little things that allow our rockstar science team to focus on what they do best: create amazing products.

As a mechanical engineer, former operator and VP of an infusion technology company, Misha brings a unique skillset and perspective and can assist clients with everything from Supply Chain, logistics, and operations.

Misha has been building and growing companies since launching Atlas Edibles in 2017.  He is experienced in delivering organizational efficiency, both internally and externally for our partners.  On the Business Development team, Misha ensures operational excellence in our partnerships with brands and in managing supply chains for scale.

Lo Noroña

Business Development Team

As part of the business development team, Lo focuses his energy on bringing clients into the fold, and making sure projects are structured in a way that ensures success for everyone and can help clients with their own sales and distribution goals as well.

With more than 20 years experience working in a range of startup Ecosystems, Lo leverages this time to serve as a steadying voice amidst the chaos of launching new products.  With his role on the Edible Chemistry Business Development team, he’ll serve as your point of contact to onboard your project and ensure we bring the services and network that you need to be successful from concept to launch.
