Edible Chemistry Consulting

Using a gap analysis of the food and dietary supplement industries Edible Chemistry has devised targeted services to both lean and abundantly resourced companies. For companies with lean research and development resources, the consultants can provide complete product development services from protocept to commercialized product. These services can include full product development, nutritional analysis, FDA panels, quality specifications, production SOPs, and gold standards. Jaime Underwood - Founder

An experienced food scientist with more than 17 years developing and commercializing quality products, Jaime has proven to perform at the highest level when it comes to providing technical expertise for product development and commercialization. Jaime has directly developed over 200 beverage, dairy, supplement, and food products that are currently in the market and has advised on the development or launch of hundreds of additional products. Seen as an industry leader in ingredient knowledge and process improvement, Jaime continues to assist others in pushing the boundaries of food and beverage innovation.

Jeff Underwood - Chief Innovation Officer

In the 28 years Jeff has been a member of the food service community, he has gained a reputation as an innovative beverage developer who provides truly unique products and experiences for his customers.  He gains inspiration for his work from his love of classic cocktails, specialty coffee and tea and the many amazing drinking and dining occasions from years of traveling nationally and internationally.  His experience spans the totality of the industry from bartending to corporate training to menu development to trendspotting.  Jeff has spent his last 17 years spearheading beverage development and customer experience presentations for two of the largest food and beverage ingredient companies in the world as well as doing independent beverage consulting for clients large and small.  This knowledge has allowed him to couple mixology trends with chemistry to continually redefine and optimize the beverage category.




Jenny Duong - Product Development Scientist

My name is Jenny Duong and I am Edible Chemistry Consulting’s Associate Product Development Scientist. I solely focus on our confectionary projects (i.e. gummies, lozenges) and dietary supplements. I graduated with a bachelor’s degree in Food Science from the University of Florida. At UF, I had the privilege to be a culinary arts instructor at the Alfred and Cathy Hitchcock Food Pantry. By utilizing shelf-stable ingredients with the fresh produce from UF’s on-site farm, I worked with my team to create nutritionally balanced recipes and taught them to students in night classes. After the program ended, I continued my afterschool activities working as a student assistant in UF’s Sensory Research Lab and becoming a teaching assistant for UF’s Microbiology Department.
